Hungry Girl had an email last week that gave a recipe for healthier calzones. While I didn't follow her recipe exactly, I did follow it mostly. :) They were quite tasty. The recipe made 6 calzones and I took a few to work the next day to share with co-workers for lunch and they were tasty microwaved also.
Here's the details. You'll need:
-1 roll of thick crust Pilsbury refrigerated pizza crust (could you make your own? Sure! However, I was in a hurry!)
-chopped onion
-chopped baby spinach
-chopped red bell pepper
-minced garlic
-turkey pepperoni-tomato sauce with basil and garlic added (or something like that)
-String cheese (2)
-Reduced fat parmesan cheese
Take the roll of dough and cut into 6 slices (while still in roll form...like you were cutting those pinwheel things or something) Roll out (love you my Pampered Chef roller!) in a semi round shape.
In a skillet, saute chopped onion, spinach, pepper, and garlic. (I sprayed with Pam Olive Oil spray). Do this for like 5-7 minutes.
Chop the string cheese into 18 chunks (or so...lol).
Spoon some sauce onto the middle of one side of the dough (don't you love my non-technical cooking talk?) Add three of the chunks of cheese and 2-3 pepperonis. Add some of the sauteed mixure. Fold over the dough and make a little pie (see picture). Seal the ends and cut a few slits in the top of the dough. Sprinkle with Parmesan cheese.
Bake at the temperature on the dough package until browned.
I estimated my calzones to weigh in (pun intended) at around 5 Weight Watchers Points each.
You can sub canadian bacon for the pepperoni or make just a veggie one.

The BEST part about this recipe is that you can alter it for family members who love to remind you that they aren't interested in eating healthy. (like my hubby!) So I add real pepperoni and full fat cheese to his. The kids love these also.

Calzones used to be my favorite. Then I had a BAD experience while prego and have not been able to have the since then.. So sad!!
