Catching Up!

I haven't done much running lately. I have been letting the knee rest. Today was the first day of no pain and I ran a half mile on the treadmill (really all the time I had) and it felt okay. I'll probably put it to the test tomorrow or Wednesday. My work schedule has been ten shades of crazy and will probably be getting worse. More details to come on that.

Anyway, I had been craving a soup with beans. So, I raided the cabinets and came up with the following.

I started out with 8 oz of dried red kidney beans and 8 oz of dried navy beans. (I really wanted pintos, but there were none in the cabinet). I read that you could quick soak them by bringing to a rapid boil for 2 minutes then turning off and letting them soak for 1 hour. Worked great!

I added all the stuff in the first picture and let it simmer on the stove for 2-3 hours. I added cheddar cheese and served with Fritos (okay...not healthy, but again...all I had). This really hit the spot and was yummy!!
This has been what I have been craving lately at night. (Well...I have been craving ice cream, but this is a close second) Strawberry yogurt (I can't do the unflavored!) and Kashi Go Lean Crunch.


And finally, I checked out the Thirty One Gifts website through a blog link and I think I might start selling it just with catalog shows. I'm pretty excited about it. When I get it off and running, I'm thinking we might have to have a giveaway!! :)

Awww, the pic of you guys is just toooo cut! Um, yeah, I gave into the ice cream tonight...bad me. I have the Dannon yogurt and the Kashi cereal too, dang it! Next time. I've never heard of Thirty One Gifts, will have to check that out! Hope it works out for ou!!!

when I get an ice cream craving I do the skinny cow ice cream...the truffle is awesome.
I do yogurt every other day in the morning for breakfast. fage with honey.

I had homemade vegetable beef soup thanks to my mom...it was so yummy. Nothing beat good soup!

Your little ones are too cute. My daughter wears here glasses (or mine) upside down all the time.I call her "Hollywood". Too cute!
